Homemade Guacamole


Guacamole is not something that you can find in Malaysia, or even any parts of Asia. A friend introduced me to this dish and in Malaysia, it is so uncommon and can only be found in certain restaurants that serve Mexican food. Unlike here in UK, guacamole is just like sambal or kicap in Malaysia and can be found anywhere especially in the supermarket.
Guacamole is basically an avocado-based dip which originated in Mexico. The traditional way of making guacamole in Mexico is by using pestle and mortar to mash the ripe avocados and mixed it with lime juice and salt.
But I have a different way of making my own guacamole from scratch which to me it tasted sooo goood! So, here is the recipe.
Ingredients
1 lime, juiced
½ capsicum (can be green or red), chopped into small dice
1 clove garlic and white onion, chopped
2 tbsp finely chopped coriander
3 ripe avocados
Salt, freshly ground black pepper and cumin powder

1. Put half the lime juice in a bowl with the chopped capsicum, garlic, onion and coriander. Halve, stone and peel the avocados. Chop roughly and add to the bowl. Roughly mash with a fork or potato masher then season with salt, cumin powder and freshly ground black pepper. Add more lime juice to taste, along with more garlic, onions, capsicum and coriander if you wish.
2. Pack into a small container and press clingfilm over the surface, making sure there are no air pockets. Cover and chill until ready to go.
3. This can be served as a dip for vegetables or nachos or served as a sauce for grilled fish, prawns, lobster, chicken, beef or lamb.
